Absinthe is a botanical spirit with an assorted past thanks to its early 19th century popularity. Many fables persist, making it the only commonly known spirit banned for decades, only legalized in Canada in 2007. In collaboration with the Apothecary Bitters Company our recipe includes 12 foraged botanicals, including a locally sourced fresh-picked Wormwood. The result is a silky anise forward spirit with robust dry wormwood notes.
